A rehydration and extrusion apparatus 5 for extruding a rehydrated fluent food product is described. The apparatus has a cylinder 50 having an extrusion die 55 disposed at one end, in which there are a plurality of apertures. A piston 503 is movable along the cylinder 50 to the one end from its other end, and a mixing device 530 is disposed within the cylinder. The cylinder has openings 520,521 for the supply of powdered food material and water.
