A method is described of producing a pastry product comprising the steps of producing a frozen filling (1) of a required shape followed by the step of folding unfrozen pastry (2) around the filling while the filling remains frozen. In a preferred method the pastry is formed into a sheet, for example by rolling, before being folded around the filling.
