PROBLEM TO BE SOLVED: To provide a production process for maltose-rich syrup. SOLUTION: The production process for maltose-rich syrup has the continuous step that the liquefied starch emulsion is continuously saccharified in the presence of at least one chain-contracting enzyme selected from the group consisting of β-amylase, pullulanase and isoamylase; from the following view points: (a) liquefying starch emulsion; (b) saccharifying the starch emulsion in the presence of maltogenic α-amylase, (c) thereby obtaining maltose-rich syrup.
