<p>PROBLEM TO BE SOLVED: To produce a buckwheat liquor having rich taste and flavor of buckwheat by using buckwheat as a liquor-brewing raw material, fermenting by solid fermentation method, subjecting the fermentation product to steam distillation and aging the middle cut obtained by the distillation process. SOLUTION: Unpolished buckwheat is used as a carbohydrate raw material and subjected to solid fermentation after the addition of a material obtained by the proliferation of mold on a mixture of wheat and pea as main raw materials. The obtained solid fermentation product is distilled by steam distillation and the distillate is cooled to separately obtain an initial cut, a middle cut and a final cut. The middle cut having an ethyl alcohol concentration of 60-70% is collected and aged for >=5 months to obtain the objective buckwheat liquor.</p> |
