PROBLEM TO BE SOLVED: To obtain a gelled beverage intaken in the sense of beverage, having a high nutritive value, suitable for breakfast, etc., being a gel state or a mixed state of a gel and a sol by limiting its viscosity to a fixed range. SOLUTION: This gelled beverage comprises a reaction gelled material of low methoxylpectin or sodium alginate and calcium, is in a gel state or a mixed state of a gel and a sol and has 800-3,000 mPa.s viscosity. In the case in which the gelling agent is a low methoxy pectin, citric acid (sodium) is used as buffer agent. In the case in which the gelling agent is sodium alginate, sodium citrate is preferably used as a calcium ion sequestering agent. The gelled beverage preferably contains greenish yellow vegetable and/or a dietary fiber. |
