PROBLEM TO BE SOLVED: To obtain a dressing including a heated and solidified egg, having shape-keeping property such as the one used as a salad as it is, texture and flavor. SOLUTION: This dressing including a heated and solidified egg is obtained by mixing the whole egg or a yolk previously heated, solidified and pulverized to fine granule, with the raw whole egg or yolk, a heat-treated acid-fermented milk, a vinegar, and, optionally, one or more kinds selected from a seasoning, a gelatinizing agent, a thickener and a functional food material, and a heat- treated and finely pulverized potato, inserting the obtained mixture into a homogenizer or the like, and stirring and mixing the inserted mixture while gradually adding an edible oil. The dressing is preferably packed in a flexible container capable of allowing the dressing to be squeezed out therefrom, and sealed to provide a product. |
