PROBLEM TO BE SOLVED: To obtain a sheet like egg-processed food capable of being melted by heat, capable of readily providing a bread impregnated with an slurry and including the thermally solidified slurry at a short time, and usable for an restaurant or the like by including eggs, milks and a coagulant. SOLUTION: This sheet-like egg-processed food comprises eggs of birds or the like, milks such as milk and skim milk, and a coagulant such as a gelatin, an agar and a carrageenan, of 0.5-8.0 wt.% (based on the whole food), and is obtained by rapidly freezing the mixture at (-30) to (-40) deg.C by using a cold wind-type rapid refrigerator. The sheet-like egg-processed food can be melted by heat. |
