PROBLEM TO BE SOLVED: To obtain a water content uniting preparation capable of uniting with an excess liquid after boiling such a food. SOLUTION: This water content uniting preparation for a food is obtained by cooking a high carbohydrate-containing starchy food e.g. a rice, potato, pasta, cereal, bean, etc., and then uniting with an excessive liquid. In the water content-uniting preparation contains (a) 20-60 wt.% physically processed starch, (b) 35-65 wt.% chemically processed starch and (c) 2-15 wt.% edible fat emulsion. |
