摘要 PROBLEM TO BE SOLVED: To obtain a spherical edible body suppressed in feeling rough to the tongue which is characteristic to water-insoluble dietary fiber, capable of adding to various foods in large amounts and exhibiting oil and fat-like texture by dissolving cellulose, etc., in an aqueous solution of an alkali metal hydroxide and coagulating and regenerating the solution under specific conditions. SOLUTION: Cellulose or cellulose and edible polysaccharides such as agar or carrageenan are dissolved in an aqueous solution of an alkali metal hydroxide such as sodium hydroxide and the solution is atomized in a medium which is nonreactive and immiscible with the resultant solution and then coagulated and re-generated to provide the objective spherical edible body having <=30 &mu;m particle diameter in 50% integrated volume and 0.6-1.0 sphericity. Further, cellulose is preferably compounded with edible polysaccharide in an amount of 0-2.5 pts.wt. based on 1 pt.wt. cellulose.
