PROBLEM TO BE SOLVED: To obtain snack food for infants that can be eaten by infants with their fingers and has excellent nutrients, color taste and texture by preparing substrate to be coated by heating a mixture of whole milk powder and the like under specific conditions, spraying the substrate with a prescribed slurry and drying them. SOLUTION: A mixture of 8-18 wt.% of whole milk powder, (3-5 wt.% of vegetable oil, 35-50 wt.% of corn semolina, up to 30 wt.% of other cereal flours, up to 10 wt.% of cereal bran, 20-30 wt.% of starch and 13-18 wt.% of water are hot extrusion swollen at 135-150 deg.C under the pressure of 130-160 bar to prepare the substrate to be coated. The substrate to be coated is sprayed with a slurry containing 30-60 wt.% of fruits or vegetable puree or concentrate, 10-30 wt.% of sugar, 10-25 wt.% of whole milk powder and 20-30 wt.% of moisture and the coated products are dried until the content of the residual water is reduced to 1.0-2.5 wt.% whereby snacks having the banana shape and taste are obtained. |
