PROBLEM TO BE SOLVED: To provide a process for the industrial production of a white sauce having a quality comparable to a special white sauce produced by a chef. SOLUTION: The mixing and heating process of milk with roux prepared by frizzling wheat flour with butter is carried out under intermittent high-speed stirring (e.g. at 3,000 rpm) e.g. with a high-speed cutter mixer. |
