FIELD: food-processing industry, in particular, sugar and confectionery industry. SUBSTANCE: apparatus has tray-shaped vessel with bottom and closure. Tray-shaped vessel is divided into sections by vertical partition walls which alternatively do not reach bottom and closure so as to define gaps. Shaft with mixing blades is mounted within vessel and sugar conveying auger is positioned above bottom. Tray-shaped vessel has sugar sand feeding device and sand solving liquid supplying device disposed on closure respectively in the vicinity of penultimate and first section in syrup flow direction for creating countercurrency flow. Syrup discharge device is made in the form of V-shaped pipe. Each mentioned gap has area equal to 1.3-1.7 of V-shaped pipe section area. EFFECT: increased efficiency and improved quality of produced syrup. 3 dwg
