PROBLEM TO BE SOLVED: To provide a remarkably excellent method for preserving vegetables. SOLUTION: This method for preserving vegetables comprises treating the vegetables, especially cut vegetables, with a 25-1,000 ppm chlorite solution, draining the treated vegetables without washing the vegetables with water, and subsequently preserving the vegetables.
