PROBLEM TO BE SOLVED: To obtain a meat improver capable of providing a delicious meat soft after heating and cooking and rich in gravy by dissolving or dispersing an alkali metal chloride, an alkali metal (hydrogen) carbonate and lactic acid (alkali metal salt) in water. SOLUTION: The meat improver having pH 6-11 is obtained by dissolving or dispersing an alkali metal chloride (e.g. sodium chloride), an alkali metal carbonate (e.g. sodium carbonate) and/or an alkali metal hydrogen carbonate (e.g. sodium hydrogen carbonate), and lactic acid and/or an alkali metal salt of the lactic acid (e.g. sodium lactate) in water. The meat improver has activities for improving a tough meat with poor gravy to provide the soft delicious meat rich in gravy without being toughened or causing shortage of the gravy even after heating and cooking by immersing the tough meat with the poor gravy in the meat improver. |
