The invention belongs to the field of dairying, namely to cheese-making. The producing process intends: making the mixture of seasonings and vinegar essence, treatment of cheese-surface by definite weight-ratio of cheese and mixture of seasonings as well smoking of treated cheese by definite conditions of regime. This invention assures well over enhancing multivariate taste gamut and appearance of smoked cheese, allows to obtain dense and homogeneous consistence of that. This invention also permits to obtain a smoky flavour and taste as well assures stability of obtained quality during all the storage time of cheese.
