A cellulose-containing composite comprising 20 to 99 wt.% of fine cellulose and 1 to 80 wt.% of at least one low-viscosity water-soluble dietary fiber selected from the group consisting of (1) decomposition products of galactomannan, (2) resistant dextrin and (3) mixtures of polydextrose with xanthan gum and/or gellant gum (with the proviso that the total amount of gellant gum and xantham gum is 0.1 wt.% or above but below 3 wt.% based on the composite), wherein the fine cellulose exhibits a mean particle diameter of 30 mu m or below when the composite is dispersed in water.
