PROBLEM TO BE SOLVED: To obtain an iron-enriched food having a good color tone and a flavor in spite of containing a high concentration of a heme iron. SOLUTION: This iron-enriched food contains 0.1-2.0% heme iron, and also 1-200% annato pigment and/or an ang-khak pigment based on 100% heme iron. |
