A rolled raw pasta strip is embossed to form three-dimensional embossed imprints. Flat pasta pieces or raw pasta material are produced by rolling and calibrating raw pasta material and supplying the resulting strip (10) to an embossing station (11) to form three-dimensional embossed imprints which do not penetrate the material and which form regions of different density. Independent claims are also included for: (1) an installation for carrying out the above process, comprising a pasta strip rolling unit, a calibration rolling station (9) and an embossing station (11); (2) a flat raw pasta material for flat pasta pieces, the material (14) having three-dimensional embossed imprints which do not penetrate the material and which form regions of different density; and (3) flat pasta pieces having embossed imprints as described above.
