Enzymatic process for the preparation of (S)-cyanhydrines

A preparation of Enantiomers (I) of optically active Cyanohydrins, comprises reacting aldehydes or ketones with cyanide group donors in the presence of native or recombinant S-hydroxynitril lyase. The reaction mixture comprises: (a) aldehyde or ketone dissolved in an organic, hydrophilic solvent; (b) an aqueous S-hydroxynitril lyase solution; and (c) a cyanide donor.
