摘要 PROBLEM TO BE SOLVED: To provide a method for producing raw noodles excellent in preservability and convenience of cooking by using calcium obtained by firing oyster shell, protamine and a mixture of one or more kinds of thickening polysaccharides, kneading raw materials under a reduced pressure, making the noodles therefrom, storing and hermetically sealing the obtained noodles in a microbe-impermeable and heat resistant storing bag, and heat-treating the hermetically sealed noodles when producing the raw noodles. SOLUTION: This method for producing raw noodles comprises the combination of a first step for mixing or dissolving 0.1-0.2 wt.% calcium obtained by firing oyster shell, 0.06-0.08 wt.% protamine and thickening polysaccharides in either a powder part consisting essentially of flour or water to be kneaded, a second step for kneading the powder part and the water to be kneaded under a reduced pressure, and a third step for storing and hermetically sealing the raw noodle obtained by the second step in a microbe-impermeable and heat resistant storing bag and heating and sterilizing the sealed noodles.
