The invention concerns an immobilised active enzyme characterised in that it consists of a particular enzyme, in particular selected from the group comprising osidase and in particular beta 1-3 glucanase, protease and lipase and immobilised by being fixed with a covalent bond on an insoluble solid complex formed between a mineral oxide preferably selected from the group comprising in particular alumina, zirconium, silicon and titanium dioxide, and a bifunctional or polyfunctional compound comprising a phosponate functional group by which it is bound to the mineral oxide and a chemical reactive group, activated as required by using an activator, said chemical reactive group forming the covalent bond with the enzyme.
