PROBLEM TO BE SOLVED: To produce a food formable to an arbitrary form by using pickled plum fruit and produce a formable food material having excellent palatability free from bitter taste by using pulp of pickled plum fruit. SOLUTION: A gelatinized jelly food concentrated to a sugar content of >=55% is produced by immersing unripe plum in a liquid containing ethyl alcohol and sugar, separating the pickled plum from the obtained plum liqueur, removing stone from the pickled plum and treating the obtained pulp under a reduced pressure lower than the atmospheric pressure at 95-97 deg.C. |
