摘要 PROBLEM TO BE SOLVED: To raise the caramelization ratio in a method for producing a caramel malt. SOLUTION: This method for producing caramelized malts comprises carrying out a heat retaining treatment of green malts in hot water at a prescribed temperature before conducting a saccharifying treatment of the green malts. The green malt after the heat retaining treatment is drained and then saccharified by keeping the temperature in the barley grains at about 80 deg.C in a rotating roaster. The temperature is subsequently raised to dry and caramelize the resultant malts. According to the method, the ratio of half grain caramelized malts which are mixed in a large number in all the malts by a conventional method can be reduced to increase the ratio of the whole grain caramelized malts.
