Preparation of ribitol (I) involves fermentation, on a medium containing a directly assimilable carbon source, of a microbial strain which is capable of generating ribulose and has NADH-specific ribulose reductase activity, but in which the NADPH-specific ribulose reductase activity has been markedly reduced or eliminated. (I) is then recovered. The above microbial strains are also claimed. |
