An apparatus is provided for rapidly changing the temperature of food products or the like. The apparatus includes a tank having side walls and a bottom wall defining a reservoir for rethermalizing liquid. A nozzle introduces a substantial stream of rethermalizing liquid into the reservoir at a high velocity to cause a substantial turbulence substantially throughout the reservoir. The nozzle introduces the stream of rethermalizing liquid at a point remote from the side walls of the tank and, thereby, effect continuous movement of the liquid in the tank. <IMAGE>
