Mechanically turning trays of cheese during maturing, while draining during manufacture. The turning machine is positioned around a stack of cheese draining trays (2). At least one empty tray is placed in the receiving side and the trays are lifted (7) so the upper surface of both stacks are approximately level (11). The empty tray is moved to the top of the stack, then turned (9) with the next tray, and its contents, and moved from one side to the other. The process is repeated, manually or automatically until the entire stack has been turned.
