PROBLEM TO BE SOLVED: To provide a production process for rice balls that can pick up the rice balls with a small force without the shape collapse of the rice balls, when the rice balls are taken out of the molds and does not need washing the inner faces of the mold or simply can wash them because no boiled rice grain stings to the inner faces of the mold. SOLUTION: In the production process for rice balls comprising the step that boils rice grains, the step that extrudes the boiled rice, the step that conveys the extruded boiled rice, the step that fills the mold with the boiled rice, the step that compresses the boiled rice filled in the mold and the step that takes out the compressed rice ball from the mold, ice thin layer is formed on the whole of or a part of the inner faces of the mold. |
