Process for the preparation of calcium tartrate from an alkaline solution resulting from the descaling of a wine tun

A process for producing calcium tartrate from an alkaline solution obtained by descaling wine vats comprises: (a) providing an alkaline solution with a potential tartaric acid content of 140-250 g/l; (b) acidifying the solution so that the pH after step (c) will be 8;(c) adding excess calcium salt and homogenising the mixture; (d) separating the crude calcium tartrate precipitate; and (e) recycling at least part of the filtrate to step (a).
