<p>PROBLEM TO BE SOLVED: To provide a production process for SAKE having the flavors and taste as well green pigment of tea. SOLUTION: One of cereals such as steamed rice, wheat or barley or malt or their mixture is mixed with KOJI (rice malt) or saccharogenic amylase enzyme, tea and water to prepare brewing mash. Then, yeast is added to the mash to perform fermentation.</p> |
