PROBLEM TO BE SOLVED: To provide a method for producing a liquid composition containing a high concentration of γ-decalactone and/or γ-dodecalactone useful as aroma components for an alcoholic beverage, food material, perfumery, etc. SOLUTION: This method for producing a liquid composition containing γ-decalactone and/or γ-dodecalactone is to use yeast cells containing an unsaturated fatty acid as a substrate, hydroxylate the unsaturated fatty acid contained in the substrate with a first microorganism having a hydroxylating function of the unsaturated fatty acid such as a lactobacillus, and then effect a second microorganism having a β-oxidizing function such as the yeast. |
