PROBLEM TO BE SOLVED: To provide a method for producing a jelly hardly causing releasing of water, hardly providing rough feeling to tongue and excellent in preservability, elasticity, texture and quality by filling a container with a jelly solution containing a heat irreversible gelling agent, etc., hermetically sealing the filled container, cooling and solidifying the jelly solution, and heating and sterilizing the cooled and solidified material. SOLUTION: A jelly solution containing a heat irreversible gelling agent such as a gellan gum, preferably in 0.05-0.5 wt.% (based on the weight of the jelly), and atomized cellulose (preferably having 20-40 μm particle diameter), preferably in 0.01-1.0 wt.% dispersed therein is prepared, and packed in a container. The container with the jelly solution is hermetically sealed, and the jelly solution is cooled and solidified, and further heated and sterilized to provide the objective jelly in the method for producing the jelly. |
