PROBLEM TO BE SOLVED: To produce a LL-noodle(long-life-noodle) fortified with a calcium component without damaging taste original to the LL-noodle by adding and compounding calcium sulfate. SOLUTION: This LL-noodle is produced from a raw material for producing the noodle, obtained by adding 1-130 g calcium sulfate to 1 kg raw material powder and compounding the addition product, and the production method thereof is also provided. The production method comprises (a) kneading the raw material powder for the noodle with water to provide a kneaded material, (b) pressing and extending the kneaded material and cutting the extended product, or extruding the kneaded material to provide noodle lines, (c) carrying out a gelatinization treatment of the obtained noodle lines and (d) carrying out an acidic liquid treatment of the noodle lines simultaneous with or after the gelatinization treatment to prepare pH of the noodle lines so as to be in an acidic region. |
