The present invention concerns DNA compositions and their use in manipulating the biosynthesis of compounds in plants. More specifically, the present invention has identified a novel gene and protein involved in the benzenoid biosynthetic pathway. Benzylalcohol acetyl transferase (BEAT) catalyzes an acetyl transfer from acetyl CoA and converts benzylalcohol to benzylacetate, a major component of C. breweri scent. Methods and compositions for the use of BEAT are disclosed herein.
