PROBLEM TO BE SOLVED: To obtain a coloring agent for meats manifesting satisfactory coloring effects in a small coating amount by concentrating filtrate of yeast extracts with ultrafiltration membrane allowing to effectively concentrate the coloring ingredients contained in the yeast extracts. SOLUTION: The subject coloring agent for meats is obtained by concentrating the filtrate of the ultrafiltration membrane of the yeast extracts. A membrane capable of fractionating ingredients of 10000 >= molecular weight is preferably selected for this process. |
