PROBLEM TO BE SOLVED: To obtain a new α-fucosidase originated from a specific microorganism belonging to the genus Penicillium, stable to organic solvents and useful for the synthesis of e.g. an intermediate of the sugar chain of complex carbohydrate. SOLUTION: This fucosidase has an action to selectively form an α1-3 fucoside bond from a sugar receptor and a fucoside compound having fucose bonded through α-bond and is originated from microorganisms belonging to the genus Penicillium such as Penicillium multicolor and Penicillium citrinum. It is preferable to produce a carbohydrate having α1-3 bond by using the α- fucosidase. |
