PRODUCTION OF TREHALOSE AND SUGAR ALCOHOL

PROBLEM TO BE SOLVED: To provide a method for separating a trehalose and a sugar alcohol in addition to a method for producing the trehalose and the sugar alcohol from a hydrogenated saccharide mixture containing the trehalose and the sugar alcohol such as at least maltitol. SOLUTION: This method for producing a trehalose and/or maltitol comprises a step for subjecting a hydrogenated saccharide mixture containing the trehalose and a sugar alcohol selected from sorbitol, the maltitol and maltotriitol to the column chromatography using a salt type strongly acidic cation exchange resin and collecting a fraction with a high content of the trehalose and/or a fraction with a high content of the sugar alcohol eluted therefrom. The method for separating the trehalose and the sugar alcohol comprises carrying out the elution of the hydrogenated saccharide mixture in the order of the fraction with the high content of the trehalose and then the fraction with the high content of the sugar alcohol by the column chromatography using the salt type strongly acidic cation exchange resin.
