PRODUCTION OF HIGHLY PURE ERYTHRITOL CRYSTAL

PROBLEM TO BE SOLVED: To provide a method for producing highly pure erythritol crystals, improved so as to give the crystals having a uniform granule diameter. SOLUTION: This method for producing highly pure erythritol crystals comprises treating an erythritol-containing aqueous solution in a crystallization process and subsequently treating the recovered erythritol crystal-containing slurry in a crystal-separating process. Therein, in the crystal-separating process, the crystals are separated under the condition of a centrifugal force of 50-500 G, and <=20 deg.C washing water is sprinkled on the wet erythritol crystals in an amount of 0.1-1 pt.wt. based on the crystals to wash the crystals.
