PROBLEM TO BE SOLVED: To obtain the subject powder capable of readily powdering and mass- producing, not requiring sterilization, having high viscosity in water suspension, excellent in water-retaining property and capable of producing a food which is high in taste, texture and nutritive valve by subjecting fresh bean-curd refuse to heat-drying at a temperature in a prescribed range. SOLUTION: Raw bean-curd refuse is formed into thin sheet and subjected to heat drying at 110-130 deg.C to afford flakes and bean-curd refuse obtained as the flakes is pulverized to provide dried bean-curd refuse powder having highly functional properties. Furthermore, the dried bean-curd refuse powder is mixed with other edible raw material such as wheat flour and the mixture is subjected to heat treatment at 170-300 deg.C to produce the objective food. |
