In a process to modify the flavour of food with gaseous friction smoke (generated by friction on wood), the novelty is that: (a) the food is also treated with liquid smoke; (b) the food may be treated either first with an application of sprayed-on liquid smoke followed by gaseous smoke, or vice versa, or simultaneously with both; and (c) before smoking, the food is first dried with hot air. Also claimed is a food smoking assembly with an atomiser jet (44, 43) which directs atomised liquid smoke at the dried food in a smoking chamber (2). |
