The invention relates to a single-stage gypsum bed process for separating potassium and for producing potassium salts from organic residual solutions from the food, fermentation and animal feed industries by filtering the said residual solution through a gypsum bed so that the potassium ions of the residual solution react during the filtration in the gypsum bed with sulfate ions or with sulfate and calcium ions, forming potassium salts.
