In a process and assembly to seal esp. plastic bags containing sausages, the bag is sealed by a staple applied by a press (26) which is lowered onto a base (28). The open end of the unsealed bag is inserted between the press (26) and base (28). The press (26) is lowered to a given distance (X) from the base (30), the interval being limited by a sensor, and applying the staple (30). The press is then raised, releasing the sealed bag.
