In the cleaning and sterilisation of food processing equipment the novelty is that the equipment is cleaned by: (a) switching of the equipment after completion of a work cycle; (b) the equipment is disinfected in a cleaning assembly; and (c) the equipment is removed from the cleaning assembly, and the cleaning assembly then runs through a self-cleaning work cycle.
