PROBLEM TO BE SOLVED: To provide a pickle injector capable of efficiently, continuously and homogeneously dispersing a pickle solution or a seasoning solution into the mass of raw meat without deteriorating the quality of the meat, thus capable of achieving the salting or seasoning of the meat without using a tumbling machine, a massage machine or the like for a long time, and further capable of homogeneously dispersing the pickle solution or the seasoning solution, even when the meat has a different injection resistance. SOLUTION: This pickle injector is provided with a high pressure-generating member 5 comprising a plunger pump or the like, a straight water flow-jetting nozzle for jetting a pickle solution, and a pressure controller for injecting the liquid substance and simultaneously gradually increasing the injection pressure from zero or a low pressure; when the pickle solution is injected from the nozzle into the meat mass. A servo motor 3 or the like is used for the control of the pressure. |
