The invention relates to a process for the production and use of granulated dried skimmed milk. The aim and the object of the invention are to produce a dried skimmed milk which is distinguished by a good keeping quality and long shelf life and, in metabolic processes, by good physiological acceptability with delayed energy delivery. According to the invention, skimmed milk having a solids content of 25-75% by mass is heated in a storage vessel and, maintaining the temperature and the solids content, is sprayed at super atmospheric pressure into a fluidised bed. At a defined product temperature and residence time, the product is granulated to a true density of sigma . 1.15g/cm<3>, characteristic instant product being agglomerated and the discharged granules being cooled to < 308 K. |
