PROBLEM TO BE SOLVED: To extract and refine a high yield of a viscous polysaccharide keeping its natural structure in a plant body by extracting the viscous polysaccharide from a plant of the Malvales with water, filtering the extract and depositing the viscous polysaccharide from the filtrate. SOLUTION: At least one plant body selected from a fruit, a seed, a leaf, a root, a stalk and a flower of a plant of the Malvales is turned into an extractable shape by crushing or the like. A viscous polysaccharide is extracted from it with water 1-10 times as much in weight at 0-15 deg.C for 3-24 hr. By filtering the extract, a filtrate containing the viscous polysaccharide is separated from a residue. A fibrous viscous polysaccharide is deposited by adding an alcohol or the like 0.2-10 times as much in weight as the filtrate into the filtrate which is stirred mildly. By filtering out the deposit and optionally drying it at 20-60 deg.C, a viscous polysaccharide having a structure with the basic skeleton of saccharides containing galacturonic acid, glucuronic acid, rhamnose, galactose and glucose and acetylated saccharides of them is obtained. This process is executable in an industrial scale for the preparation of a viscous polysaccharide to be used safely as a food and a food additive. |
