A process for producing fruit preparations out of a fluid and fruit pieces, comprises preheating the composition to a temperature (T1) of 40-60 deg C while it is pumped through a tube, then heating to a temperature (T2) of 75-100 deg C in a heat exchanger section. The composition is held at T2 and then cooled to less than 30 deg C in a second tube heat exchanger (6).
