PURPOSE: To provide a method for producing rice having absorbed water capable of forming a process which eliminates change of water in heating and cooling processes, hardly has loss of weight of rice and readily controls various germs and reducing or eliminating use of a germicide in a device. CONSTITUTION: This method for producing rice having absorbed water comprises putting washed rice or immersed rice and at least one selected from water, soup, sauce, broth, vinegar, a seasoning solution, etc., in an amount corresponding to >=75 pts.wt. based on 100 pts.wt. of raw rice of the washed rice or immersed rice in a container, sealing, heating the rice in the container to >=65 deg.C to make a water content of >=75 pts.wt. water based on 100 pts.wt. of the raw rice and retaining <=85% pregelatinization degree. |
