摘要 PROBLEM TO BE SOLVED: To provide a method for producing dumpling dough capable of providing a soft and delicious dumpling having resistance to the teeth and adhesiveness. SOLUTION: Nonglutinous rice grains are washed by a rice-washing machaine 10 and dipped in water for a prescribed time. The dipped rice grains are drained off and subjected to the first steaming by a steaming machine 20. The rice grains after finishing the first steaming is washed again by the rice-washing machine 10 to remove a viscous liquid covering the surface of the rice grains. After draining, the rice grains are subjected to the second steaming by the steaming machine 20. The steamed rice grains is pounded by a rice-cake making machine 30 to provide the objective dumpling dough in the method for producing the dumpling dough. By removing the viscous liquid covering the rice grains in the midway of the steaming step, the rice grains are impregnated with sufficient amount of the water.
