PROBLEM TO BE SOLVED: To provide a method for producing an ultrafine rice powder by destroying the adhesion of a protein, a cellulose, a hemicellulose and a pectin covering the periphery of a starch to facilitate the dissociation of the starch when proceeding fine particle formation of the rice. SOLUTION: A protein is denaturated by heating a rice grain, and an adhesive glucidic cell membrane of a cellulose, a hemicellulose, a pectin or the like is softened to facilitate the penetration of water. After dipping the heated rice grain in water, the rice grain is pulverized in water to separate the adhesive material and the starch, and further to provide the objective ultrafine rice powder starch while preventing regeneration of adhesion in the method for producing the ultrafine rice powder starch. |
