摘要 PROBLEM TO BE SOLVED: To obtain Bacillus coagulans C001 of a lactic bacterium, positive in formation of an acid from xylose and mannitol respectively, having a prescribed survival rate of the bacteria, further having high heat stability, capable of allowing a food or the like to contain the lactic bacterium in a living state. SOLUTION: This Bacillus coagulans C001 of a lactic bacterium is positive in formation of an acid from xylose and mannitol respectively, and has >=70% survival rate of the bacteria after standing for 15 min at 102 deg.C. The heat resistant lactic bacterium Bacillus coagulans is obtained by culturing Bacillus coagulans of Lactobacillus sporogenes in a liquid medium containing yeast extract and glucose, and further culturing the obtained Bacillus coagulans of Lactobacillus sporogenes in a medium containing reducing sugar, the yeast extract and manganese salt and/or calcium salt. A food, a medicine and a roux are preferably prepared by using the lactic bacterium Bacillus coagulans C001.
